Exile Bistro Serves Artisan Food with Pacific Northern Style
Exile Bistro describes itself as an artisan restaurant and cocktail bar. Owner Vanessa Bourget, a holistic nutritionist, has created a simple concept kitchen where food is art and the style is pacific northern with traditional and modern influences.
As you might expect from a holistic nutritionist, the menu is healthy. Plant-forward cooking means there are plenty of vegan and vegetarian options. Carnivores need not avoid the place. There are ethical and wild game meat options. Rather than eliminate whole food groups from the diet, Bourget promotes organically sourced, seasonal offerings from the natural bounty.
Vegetarians will rejoice over the luxury of choice with dishes like lentil pâté, homemade roasted vegetable and ricotta ravioli, and two takes on the rice bowl ‒ one with mushrooms, egg, pickled vegetables and chili sauce, the other with squash, chanterelles, and lemon thyme fava beans.
Meat dishes are for serious meat lovers. A five ounce dry rubbed elk steak, bison short ribs, and a fondue, featuring a variety game meat, add some weight to the menu. The seared duck liver served with whiskey butter, barley toast, winter salad, black fig brandy & apple onion compotes offers a mélange of meat and veg.
If you are looking for gluten-free food, Exile Bistro is an excellent choice. Everything on their dinner menu is either gluten-free or can be made gluten-free with the exception of their ravioli. They make Eggs Benedict on a gluten-free biscuit, which is a very rare find. Other notable brunch offerings include boar bacon and deer sausage, an eggless chickpea omelette, and wheat-free oat and seed bread.
Signature cocktails are as plant-forward as the menu. From the Green Caesar with potato vodka, cold pressed juice, blue-green algae, Celtic salt, bird’s eye chili, pickled veggies to the NEOgroni with gin, cynar artichoke spirit, Maidenii sweet botanical vermouth, and bitters ‒ one could become convinced that cocktails were good for you.
