Corbeaux Bakehouse’s Café Meets Restaurant Concept Perks Up Food Scene
Brothers Chris and Russ Prefontaine of Fratello Coffee and Analog Cafes, have opened their first restaurant without straying too far from what they do best. Corbeaux Bakehouse is part café, part restaurant, and a completely intriguing concept sure to catch the attention of Calgary residents.
The brothers have snatched up New York chef Keith Luce, named one of the best new chefs in America in 1997 by Food & Wine magazine. He has cooked for the Clinton’s in the White House, and in kitchens in Paris, New York and San Francisco. He brings the restaurant expertise to this novel partnership, and entices you to sit down and order from the menu rather than grab coffee and a pastry to go.
Not that grabbing Fratello’s godfather espresso and a warm brioche donut won’t leave you perfectly pleased when you are on-the-go; but if you have the time, 12 grain polenta with parmesan and marscapone, thick-cut bacon, a duo of peached eggs with sea salt, cracked pepper and gremolato and preserved tomato jam might perk up your taste buds in a wholly more satisfying way.
In fact, you can pretty much build the breakfast of your dreams from a menu that features a variety of selections from the bake shop butcher shop, cheese shop, pastry shop and the store room (caviar, butter, preserves, candied nuts and oils) supporting the kitchen features. It’s brunch heaven here.
For lunch and dinner, all of the shop menu selections are back to support new kitchen features. You’ll find dishes like roasted scallops, slowly cooked black cod, a house-made burger, hot and sour meatballs, baked lasagna and chicken pot pie. Your favourite comfort foods with a gourmet twist are served up daily at a very reasonable price, if you can resist loading up on the cheese and pastry sides.
Corbeaux Bakehouse doesn’t take reservations currently. Arrive early to avoid line ups and disappointment.
